Regarding high-end Japanese Omakase restaurants with a per-person cost of around a thousand yuan, how should one balance style and practicality in space design?

Speaking of Omakase, it's likely unfamiliar to few. Simply put, it's a dedicated dining mode where the chef decides the menu, and the diners eat accordingly, placing extremely high demands on the spatial atmosphere and dining experience.

Today, let's do a detailed breakdown of the stand-alone Japanese Omakase restaurant renovation project created by Shanniao Space Design, presenting the design logic of a high-end Japanese dining space from structural reconstruction to detail refinement.

关于人均千元的高端日料Omakase餐厅,空间设计该如何拿捏格调与实用性?说起Omakase,想必很多人都不陌生,简单来说,就是厨师做什么,食客吃什么的专属就餐模式,对空间氛围、用餐体验有着极高的要求。

 今天就和大家详细拆解,我们山鸟空间设计打造的独栋日料Omakase门店改造项目,从结构重构到细节打磨,全方位呈现高端日料空间的设计逻辑。

Structural Reconstruction: Breaking Limitations, Reshaping Space Circulation

结构重构:打破局限,重塑空间动线

这家店原本是独栋建筑,原始结构存在诸多不合理之处,我们首先从整体布局入手,做了两大核心调整。

The store was originally a detached building with many unreasonable original structures. We first started with the overall layout and made two core adjustments.

一方面,重新规划主入口进入方式,优化食客进店的第一动线;

另一方面,大胆打穿一、二楼楼板,打造中空核心区域,彻底改变原本空间闭塞、压抑的问题,让上下楼层实现视觉连通,整个空间瞬间变得通透开阔,告别原本拥挤局促的格局。

On the one hand, we re-planned the access mode of the main entrance to optimize the first circulation of diners entering the store; on the other hand, we boldly broke through the floor slabs of the first and second floors to create a hollow core area, completely solving the problem of closed and depressing original space, realizing visual connection between the upper and lower floors, making the whole space instantly transparent and open, and bidding farewell to the original crowded and cramped pattern.

外立面设计:省钱实用,兼顾品牌辨识度

Facade Design: Cost-effective and Practical, Balancing Brand Recognition​

门店原有外立面造型单一,且存在品牌展示的硬伤。原本的 LOGO 设置在低处,经常被来往车辆遮挡,食客很难注意到品牌标识。

The original facade of the store had a single shape and had defects in brand display. The original LOGO was set at a low position, often blocked by passing vehicles, making it difficult for diners to notice the brand logo.

我们秉持低成本改造、适配原结构的原则,将一层厨房左侧区域,做了与入口右侧一致的造型设计,保证外立面整体协调统一;同时在上方新增一组品牌 LOGO,彻底解决标识遮挡问题。

Adhering to the principle of low-cost renovation and adapting to the original structure, we designed the left area of the first-floor kitchen with the same shape as the right side of the entrance to ensure the overall coordination and unity of the facade; at the same time, we added a new set of brand LOGOs above to completely solve the problem of logo blocking.

很多高端日料店一味追求小众感,把 LOGO 做的极小,看似有格调,却丢失了品牌传播性。在我们看来,空间格调与品牌辨识度从不冲突,实用且有质感的设计,才是商业空间的核心。

Many high-end Japanese restaurants blindly pursue a niche sense by making the LOGO extremely small, which seems stylish but loses brand communication. In our opinion, space style and brand recognition never conflict, and practical and textured design is the core of commercial space.

室内空间:细节赋能,沉浸式禅意就餐

Indoor Space: Empowering with Details, Immersive Zen Dining​

一楼动线:人性化细节,提升体验感

First-floor Circulation: Humanized Details, Enhancing Experience​

一楼入口处特意规划过渡通道,暗藏专属鞋柜空间。食客进店脱鞋后,服务员可将鞋子收纳妥当,用餐结束后提前备好,全程无需食客费心,完美契合高端日料的服务调性。

A transition passage is specially planned at the first-floor entrance with a hidden exclusive shoe cabinet space. After diners take off their shoes when entering the store, waiters can properly store the shoes and prepare them in advance after the meal, without any trouble for diners throughout the process, perfectly fitting the service tone of high-end Japanese cuisine.

同时设置公共餐区与寿司吧台,满足不同就餐需求;原本一楼中间的花园区域上下隔绝,我们将其打通,让一、二楼形成空间呼应,既丰富了空间层次,又让整体采光与视野更优质。

At the same time, a public dining area and a sushi bar are set up to meet different dining needs; the original garden area in the middle of the first floor was isolated up and down, and we opened it up to create a spatial echo between the first and second floors, which not only enriches the spatial hierarchy, but also improves the overall lighting and vision.

楼梯区域:主题点缀,暗藏设计巧思

Staircase Area: Themed Decoration, Hidden Design Ingenuity​

结合空间主题,我们特意挑选四叶草造型灯具装饰楼梯,简约又不失设计感,成为空间里的精致亮点,让上下楼的过程也充满仪式感。

Combined with the spatial theme, we specially selected clover-shaped lamps to decorate the staircase, which is simple yet stylish, becoming an exquisite highlight in the space and making the process of going up and down stairs full of ritual sense.

二楼包间:一屋一景,氛围感拉满

 Second-floor Private Rooms: One Room, One Scene, Full of Atmosphere

二楼打造多个特色包间,其中包含一间最大的主力包间,其余包间统一空间氛围感,却在材质与细节上做差异化处理。

 A number of characteristic private rooms are built on the second floor, including one largest main private room. The other private rooms have a unified spatial atmosphere, but are differentiated in materials and details.

两间主打温馨木色的包间,风格温润柔和;另外的包间则主打日式禅意风格,打造专属日式造型墙面,搭配精致日式花艺,纯正的日式就餐氛围瞬间拉满。

Two private rooms mainly feature warm wood color with a gentle and soft style; the other private rooms mainly feature Japanese Zen style, with exclusive Japanese-shaped walls and exquisite Japanese floral arrangements, instantly creating a pure Japanese dining atmosphere.

针对小型木色主题包间,考虑到空间尺度,造型设计力求简约大气,其中一间还特意加装灰色镜面,从视觉上拉升空间感,小空间也能尽显通透大气。每一间包间都各有特色,却始终围绕静谧、雅致的核心调性,让食客沉浸式感受日料饮食文化。

For small wood-colored themed private rooms, considering the spatial scale, the shape design strives to be simple and grand. One of them is specially equipped with gray mirrors to visually enhance the spatial sense, making small spaces also transparent and grand. Each private room has its own characteristics, but always revolves around the core tone of tranquility and elegance, allowing diners to immerse themselves in Japanese food culture.

卫生间设计:不容忽视的空间闭环

Bathroom Design: An Indispensable Spatial Closed Loop

很多餐饮设计容易忽略卫生间,但我们始终认为,卫生间是食客必体验的空间,更是整体设计的重要一环。在这个项目中,我们让卫生间的设计风格与整体空间完美融合,不脱节、不敷衍,让就餐体验形成完整闭环,不放过任何一个细节。

Many catering designs tend to ignore the bathroom, but we always believe that the bathroom is a space that diners must experience and an important part of the overall design. In this project, we perfectly integrate the design style of the bathroom with the overall space, without disconnection or perfunctory treatment, forming a complete closed loop of dining experience without neglecting any detail.

高端餐饮空间的设计,从来不是单一的美学表达,更是商业逻辑与用户体验的双重考量。

 The design of high-end catering space is never a single aesthetic expression, but a dual consideration of business logic and user experience.
